Ripe fruits, spices, dense and silky structure: a modern Chateauneuf !

Origin: the vines spread throughout the whole appellation area. Mainly the clay in the North and North East, sand with molasses from the miocene period covered with pebbles from the Alpine diluvium (the famous “pebbles”) in the South.

产地:遍及整个产区,北部和东北部以粘土为主,而南部是典型的沙砾土质。

Grape varieties: Grenache 70 % (40 years old vines average age), Syrah 20 %, Cinsault 10% (25 years old).

Production surface: 44 ha (approximately 88 acres)

Vinification:

酿制工艺:

The grape maturity of each parcel is followed scrupulously. Our young vines are often ripe earlier. The whole harvest is hand picked, with a severe selection in the vines.

The grapes are destemmed entirely and gently pressed, all is done by gravity. We use a pneumatic press to be as gentle as possible with the berries.

Fermentation is traditional, vatting is between 15 to 18 days, the extraction of the fruit is controlled by temperature (around 25°C).

每一款葡萄依次成熟,井井有条。我们年轻的葡萄藤通常成熟较早。全部以手工采摘,对葡萄精挑细选。我们采用重力工艺对所有葡萄进行温和的压榨,从而最好的保护果实。温控(25摄氏度)发酵15-18天。

 

We do some “pigeage” (i.e. punching the cap) once or twice a day to oxygenate the wine. The tank temperature is always between 25-30°C. The wine is aged in vats from three to four weeks to enhance tannins and colour concentration.

我们每天给酿制过程中的葡萄酒进行一至两次的“输氧”。桶内温度控制在25-30度之间,葡萄酒通常要在大桶中陈放3-4个星期从而加强单宁和色泽。

Ageing : we process a 12 months barrel ageing in oak tuns (i.e. 4000 L. barrels).

陈年:橡木桶陈年12个月。

 

Tasting notes :  Aromas are intense and slightly over ripened.

The wine is full bodied and complex with aromas of black and jammed fruits. It starts to express its complexity with notes of gun flint, leather, and spices such as cinnamon, clove or musk.

There is a good length in mouth and a structured body. This combination of ripe fruits, soft spices, with a dense and silky structure makes the Selection Camille Cayran a great  Chateauneuf .

你好~我见过很多教皇新堡的那个标志是两把钥匙交叉,中间一个皇冠的!为什么这款教皇新堡的标志确实这样的!有啥区别么?

酒园不同,瓶子造型也不同,教皇新堡有很多的酒园的亲.
