AROMA:…..Intense and complex aroma to Moscatel variety with reminiscences to floral aromas such as  orange blossom, citrus fruits, honey and dry fruits.

TASTE:…………… Smooth tasting with a long persistent final sensation. Taste suited to the variety Moscatel. It is silky, rich and full of flavour in the mouth.

MAIN NOTES: A luscious liqueur wine traditionally  produced from over-ripened grapes which have been exposed to the long-lasting sunlight of the Mediterranean Climate.

Lifted Muscat fruit aromas on the nose, the palate is rich and exquisite, with perfect integration of  sweet as well as acid sensations to prevent it from being silky sweet( cloying). Clean  and rich finish with a really good length. 

FOOD MATCHES: ..This dessert wine is ideal to consume at the end of a meal  with sweets, cakes  or on the rocks.  Recommended to be drunk cold at 7ºC.

品尝说明:这是一款醇厚,甘美的传统葡萄烈酒,由地中海阳光沐浴下的熟透的葡萄酿制而成。口感丰富而柔顺,酸甜的巧妙混搭,即使畅饮也不会觉得甜腻 。清爽,浓郁,回味无穷。

配餐:是餐后甜点的理想伴侣,或者加冰单饮。建议冰镇于7摄氏度 时饮用。

PRODUCTION PROCESS

1.        We select the best vineyards of Moscatel grapes   following  a criterion of quality:

a.        Acidity total

b.       Baumé degree

c.        Sanity of the grape

2.        Harvest at the optimum moment when we find the over-ripened grapes which have been exposed to the long-lasting sunlight of the Mediterranean climate characteristic for influences of the Mediterranean breezes.

3.        Rigorous control in the process of harvest to avoid the beginning of fermentation  and the oxidations before the grape entrance in the cellar. We have some rules of harvest for all our farmers that are controlled by our quality department and specific technicians in the vineyards.

4.        To eliminate the herbaceous parts from the grapes to avoid aromas and  astringents and herbaceous tastes.

5.        Short maceration of the most with the skin, avoiding the  oxidation and fermentation starts during 5-10 hours at low temperature (5-10ºC). Pelicular maceration  at low temperature to get the extraction of the aromas in  the skin.

6.        Separation of the skin from the most  and clean process of the most  through physics (to decant the wine, to leave sediments behind)  or dynamics methods. Addition of wine alcohol to get 15% Vol and maintain the natural sugars of the most that exists in  grapes.

7.        With the absence of the oxygen and the addition of carbonic we start the process of removing around.

8.        Stabilization processes through  clarification and filtration.  Tartaric stabilisation by cold treatment. Around –7ºC during 8 days in an isothermal deposit.

9.        Final filtration before the micro filtration in order to guarantee the microbiological stabilisation of the wine.
